    Let me be clear...these are my interests, although I am not actively engaged in any of these--I'm very busy raising two little girls that are 17 months apart (the oldest being three)!<br /><br />Canning & other food preservation, knitting, crocheting, sewing, cross stitching, cooking & baking and Bible study.

    My sweet husband and I don't exactly think the same. My recognition of red flags and preparations are a little much for him, I think. I might as well be saying, "The sky is falling! The sky is falling!" Sorry, I guess I should have been a little more clear with the comparison.

  5. I'm wishing I were more prepared. As I wish, I'm making lists of things I need to get, things I have, things to do (stock up on yarn and thread, etc), things to take if I drive away and never return, things to take if I walk away and never return and things to purge to make room for long-term storage.

    Do y'all ever buy your buckets locally? If you do, where would you look? I have called a feed store and a restaurant wholesaler with no luck. I called another restaurant supplier and they are $21 with lids--OUCH!! I also put in a call to my county extension office, still waiting on that call back. I'm really new at this, but ideally I'd like to put everything into buckets for ease of transportation and preservation.

    I got these from the Ball Blue Book. Cherry Jam 1 qt chopped and pitted sweet or sour cherries 1 pkg powdered pectin 1/4 c lemon juice (use only with sweet cherries) 5 c sugar Combine cherries, pectin and lemon juice, if needed, in a large saucepot. Bring to a boil over high heat, stirring constantly. Add sugar, stirring until dissolved. Return to a rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam if necessary. Ladle hot jam into hot jars, leaving 1/4-inch headspace. Process 10 minutes water-bath. Yield: about 6 half-pints. Plum Jelly 5 1/2 c plum juice 1 pkg powdered pectin 7 1/2 c sugar Combine juice and pectin in a large saucepot. Bring to a boil over high heat. Add sugar, stirring until dissolved. Return to a rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam if necessary. Ladle hot jelly into hot, sterilized jars, leaving 1/4-inch headspace. Process 5 minutes water-bath. Yield: about 8 half-pints. It does give instructions for fruit juice too. Let me know if you need it.

  10. I'm new too!!

    Hey, I live in Spanish Fort, Alabama (real close to Mobile). I am stay at home mom with two beautiful girls. Given the financial state of our nation and the fact that I live in "Hurricane Alley," I have been researching long-term food storage and emergency preparedness. Y'all seem to be a wealth of information and I can't wait to warm up my printer. I have lots of questions, but I'll check all the previous threads first. Thanks for being organized and available to others. Anybody else from down my way?
