Potato Salad wars... the RECIPES!

OK, the lobster one doesn't *count* (although it's my favorite! yumyum )

 

 

This is how I make my potato salad:

CAT'S POTATO SALAD

This is a "to taste" recipe... ends up as I happen to make it. In general, this is how I do it.

 

about 2 cups Miracle Whip salad dressing

1 Tbsp sugar

1 tsp salt

1/2 tsp celery seed OR celery salt

1 Tbsp (or more) sweet pickle juice

1 Tbsp prepared yellow mustard

(sometimes I add a bit of cider vinegar)

cooked potatoes, diced

boiled eggs, diced

chopped onions to taste

chopped sweet pickles

 

Mix the salad dressing, sugar, salt, celery seed, pickle juice, mustard, and vinegar (if using). Stir well and allow to sit until sugar and salt dissolve; mix well again. Adjust as you want for taste.

 

Combine the rest of the infgredients in a large bowl. Stir in dressing, mix well, and refrigerate for several hours or overnight. Tastes better the next day when flavors mingle.

Cat Cat Cat (Mt3b shaking her head) potato salad does not have an "official measured" recipe. neener Like Darlene said it is made in 10 lbs increments...

 

a medium bag of potatoes

a squirt of mustard or two

a blob of mayo

a couple of eggs (or not)

a dash of paparika

a scoop of sweet relish

a handful of onion

a toe stumping of sugar

and a sneeze of cider

I have asked my mother for several of her recipes and this is about the way I get the recipes. Her comment is she never measures shrug

Both my husband and my father would disown me immediately if I ever let a sweet pickle come near my potato salad! So here's my recipe...

 

4 medium potatoes, peeled and diced

4 hardboiled eggs, chopped

3 medium dill pickles, chopped

4 green onions, sliced

1/2 cup mayonnaise

1 tablespoon cider vinegar

1 tablespoon brown mustard (such as Gulden's)

1/2 teaspoon celery seed

pinch salt

1/4 teaspoon black pepper

 

In a medium saucepan, simmer potatoes until just fork tender. Drain and rinse under cold water. Put in a bowl and add eggs, pickles, and onions (you can also add sliced celery if you want - I almost never have it on hand).

 

In a small bowl, combine mayonnaise, vinegar, mustard, celery seed, salt and pepper. Stir thoroughly, taste and adjust seasonings if necessary. Mix into potato mixture.

 

Refrigerate several hours or overnight to let the flavors meld.

How about a simple potato salad?

 

some diced and cooked tatties

a couple of diced boiled eggs

some chopped shallots

Parsley (optional)

prepared mayo and with a dash of mustard mixed through.

 

Keep it simple

diced potatos

sliced eggs

sliced green onion or chives

grated carrot

crushed flax seed

olive oil(just a bit)

mayo

mustard

cumin

paprika

celery seed

salt and pepper and sugar to taste

 

i mainly just eyeball quantities, but i use 6 potatoes and 6 eggs and one or 2 carrots for a family of 4. Sometimes i make extra for lunches the next day. My papa likes to put raisins in his.

Ok now...I like Sue's simple recipe...except I would use onions instead of shallots and skip the parsley...and I would have to clean my glasses off when reading "tatties"...I swear I read something else... eek
