Lois Posted August 10, 2006 Share Posted August 10, 2006 Berry Syrup Recipe By : Key Gourmet CD Rom Categories : Canning, Preserves, Etc Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 cups berry juice -- (raspberry) 1 3/4 cups sugar 1 tablespoon lemon juice Do not prepare more than 4 times amount at once. Bring strained berry juice and lemon juice to full boil. Add sugar. Boil hard 1 minute, stirring constantly. Pour into clean jars and seal. Process in hot water bath 10 minutes. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ I have not made this, I was looking for the recipe for berry syrup in general and it looked like it would do. I was thinking of making elderberry syrup. I would probably use bottled lemon juice. Link to comment
Mother Posted August 10, 2006 Share Posted August 10, 2006 This is very similar to what I've always used in the past but I now prefer to can my juice plain and add whatever I need to it later. We use mainly honey here and though you can prepare the syrup with honey, we use mostly raw honey and I'm not crazy about heating it that hot. With either method, sugar, honey or plain, the juice seems to store equally well. I will say that the already sweetened product is much easier and faster to use in hot or cold drinks. Link to comment
