Tiger
Anybody ever done it? What were your results? and what do you use it in? I have several books devoted to dehydrating and they all seem to be very skimpy on info relating to summer squash and its uses. I love summer squash fresh, but have never tried preserving it. Help TIA. Quote Link to comment
Canned Nerd
When I have excess I slice thin, put my favorite seasonings on it, and dehydrate into snack chips. Quote Link to comment
CrabGrassAcres
Yes, I've dehydrated yellow, zucchini, patty pan squash and cucumbers. I use any of them in stew or soup, just drop the dry veggie into the pot. I like the squash reconstituted and fried up with potatoes and onions. Melt a little cheddar over it. I sometimes chop some of the dried veggies up and add them to spaghetti sauce or chili. Quote Link to comment
Mt_Rider
Thanks for the inspiration. MtRider [hoping for great things from yellow squash/zuke this year.....mebbe.....] Quote Link to comment

SusanH
I'm waiting for my first patty pans from the garden. Slice thin, salt and pepper, then dredge in flour. Fry in a cast iron skillet till brown on both sides. Serve hot! YUMMY Quote Link to comment
Cricket
Does summer squash need to be blanched before dehydrating? Quote Link to comment
ScrubbieLady
I like the squash reconstituted and fried up with potatoes and onions. Melt a little cheddar over it. I sometimes chop some of the dried veggies up and add them to spaghetti sauce or chili. My hubby likes the squash dipped in batter and fried. Would it work with dehydrated squash? Usually, I just slice and freeze but it would be nice to free up some freezer space(I don't have a lot) Quote Link to comment
CrabGrassAcres
I've never cooked it like that. I think the reconstituted texture would be better than the frozen texture though. Cricket, I don't blanch it, just slice it about 1/4 inch thick and spread on the trays. I try to work fast and get it right into the dehydrator. Quote Link to comment
ScrubbieLady
I'll have to try that. Thanks for the info CGA. Quote Link to comment
Tiger
I didn't blanch mine and it turned out fine. I've already used some of the dehydrated squash in soup and it was great! Didn't taste any different in the soup than fresh squash would have. Quote Link to comment
Cricket
I will definitely be drying some zucchini this summer! Thanks, Ladies! Quote Link to comment
Daylily
We dry lots of yellow summer squash and zucchini. I don't blanch it. I've dried slices and chunks. Both work great. I just reconstitute it as a vegetable all by itself. Very tasty. Quote Link to comment
Amishway Homesteaders
Now that things are starting to get ready for Harvest - it is time to dig out the dehydrater and start slicing! Quote Link to comment
Jeepers
I'm getting ready to dig out my dehydrator too. I might end up using it in the garage if it stays hot here. I have air conditioning but no use making it work harder than it already is $$$$$ Quote Link to comment
kappydell
i bought a new 'chop-a-matic' (precursor to the 'slice-a-matic' they show on TV for giggles, but my real work horse is my "Feemster's Famous Slicer" this time of year.... Quote Link to comment
