Don't throw out those leftovers!

 

Use leftover pork and beans to make an open-faced sandwich. Put the beans on hamburger bun halves or bread, top with a slice of American cheese and broil until the cheese starts to bubble and is melted.

A SCALLOP OF CHICKEN WITH CELERY for chicken leftovers.

 

Cook one cup of celery, cut in inch pieces, in boiling slightly salted water, until tender. Save the water to make sauce. There should be one cup. Slice thin two cups of cold chicken, discarding all skin, season with salt and pepper, and moisten with a little left-over gravy. Melt two tablespoonfuls of butter, stir in two tablespoons of flour, and when bubbling add slowly one cup of celery water, one-half cup of milk, one-quarter teaspoon of salt, and a little pepper. When thickened and smooth, stir in the cooked celery. Put a few buttered crumbs in a baking-dish and arrange the chicken and sauce in alternate layers. Cover with well-buttered crumbs. Brown in a hot oven.

Leftover chili can be used to top baked potatoes, or over tortilla chips, or use as a dip for chips. Sprinkle grated cheese over it, too, and add a spoon of sour cream if you like.

Rice

Leftover rice does not have to be thrown out. You can place this in a casserole dish, add a little water, a herb cube, cover it with foil and reheat it - or use the microwave, but then cover with a micro- wave cover not aluminum foil. Our favorite use of leftover rice is to

 

make fried rice. You can use any combination of leftover vegetables, fresh herbs -especially coriander is delicious - and leftover meats cut in thin strips to make a good fried rice dish. Several dashes of Thai fish sauce brings out the flavors. The fish sauce is full of vitamins and enhances the flavors. Thai fish sauce does not taste like fish; it is like a soy sauce - it adds a little salt and "energy". To start with, you might try sprinkling no more than one teaspoon into the food you are preparing to see if you like the additional flavor.

 

When you make fried rice, try adding one or two fresh tomatoes. Remove the seeds from the tomatoes and chop them into good- sized pieces. Add them to the rice at the last minute, stir through and serve. By removing the seeds and adding the tomatoes at the last minute, the tomatoes do not become soggy and the seeds do not add unnecessary liquid to the rice. If you include strips or cubes of leftover meats to your rice, you have a whole meal which is nutritious, economical and tasty.

Morning-after French toast: Use leftover cranberry, pumpkin or nut bread to make warm and wonderful French toast the next morning. Top it with a spoonful or more of canned berries, peaches or crushed pineapple.

South of the Border Casserole

 

You can use either chicken or turkey in this quick, tasty Tex-Mex inspired casserole. It's a great way to turn leftovers into an out of the ordinary casserole.

 

2 cups cooked rice

4 oz can diced green chiles

16 oz jar medium picante sauce

2 - 3 cups cooked chicken or turkey, pulled into bite-sized pieces (use your fingers)

8 oz canned mushrooms (stems and pieces)

6 Tbsp sour cream

 

 

Place chicken or turkey in the bottom of a greased 1 1/2 quart casserole dish. Mix together picante sauce, chiles, and mushrooms. Spread all but 3/4 cup of mixture over chicken. Add sour cream and rice to remaining picante sauce mixture. Spread over mixture in casserole dish.

Bake at 350 degrees for 30 minutes, until hot and bubbly.

Mushroom-Onion Chicken

 

2-cups of chicken breasts chunks leftovers

1 can cream of mushroom

3/4 can of milk *soup can*

2/3 cup french fried onions

black pepper

 

heat a skillet. Add chicken, add soup and milk, stir... simmer about 10 min... add onions and season with pepper to taste. cheap, fast and easy....

Continental Baguette

1 cooked tenderloin from Pork Tenderloin Fajitas recipe, thinly sliced

1 baguette (long, thin French bread), about 24 inches long

½ cup spreadable garlic and herb cheese

½ cup fruit chutney or cranberry sauce

4 large lettuce leaves

 

Cut baguette into 4 equal pieces and cut each lengthwise. Spread cheese onto the bottoms of bread, followed by chutney. Top with slices of tenderloin and lettuce, then tops of bread.

Serves 4.

Don't throw out that Left over garlic bread from last nights dinner. Use it for this meal:

 

Italian Grilled Cheese Sandwiches:

 

Ingredients

1/4 cup unsalted butter

1/8 teaspoon garlic powder (optional)

12 slices garlic bread

1 teaspoon dried oregano

1 (8 ounce) package shredded mozzarella cheese

1 (24 ounce) jar marinara sauce

 

 

Directions

1 Preheat your oven's broiler.

2 Place 6 slices of bread onto a baking sheet. Spread a small handful of the mozzarella cheese over each slice. Top with the remaining 6 slices of bread. Mix together the butter and garlic powder, brush some over the tops of the sandwiches, or spread with the back of a tablespoon. Sprinkle with dried oregano.

3 Place baking sheet under the broiler for 2 to 3 minutes, until golden brown. Remove pan from oven, flip sandwiches, and brush the other sides with butter, and sprinkle with oregano. Return to the broiler, and cook until golden, about 2 minutes.

4 Cut sandwiches in half diagonally, and serve immediately with vodka sauce on the side for dipping.

For your leftover mashed potatoes. This is what we do. We do what we call, stuffed hotdogs!

Slit your hotdogs lengthwise, but not all the way through, open them to lay flat on a cookie sheet, add mashed potatoes on top to cover, add cheese, and baco strips, bake in oven until cooked and bacon is cooked. We love them, and serve them with a tossed salad. You can also add any other toppings you want on top of the potatoes, Use you imagination.

Left Over Low Mein

 

 

 

1 lb thin spaghetti or vermicelli

1 onion, cut into julienne

1 green pepper, cut into

-julienne

3/4 lb mushrooms, sliced

1/2 bun. fresh broccoli, cut

-into 1 flo

3 carrots, peeled and sliced

-thin on

2 cloves garlic, minced

2 tb peanut oil

2 c leftover ham, cut into

-julienne

1 tb mrs. dash

2 tb soy sauce

3 c to 4 c leftover bbq sauce.

 

Start spaghetti cooking first, cook according to

 

directions. In a wok on high heat stir fry the

 

vegetables in the peanut oil until crisp tender. Do

 

not over cook! Add ham, drained spaghetti,

 

seasonings, and BBQ sauce. Mix gently and heat

 

through. Serve immediately.

Spring Rolls

 

Spring rolls (sometimes referred to as summer rolls) are a Vietnamese specialty made with rice paper.

 

Ingredients:

 

rice paper

warm water

Napa cabbage

carrots

mint

fully cooked meat--chicken, shrimp or pork

sprig of cilantro

 

Preparation:

 

Before making spring rolls, place rice paper in warm water to make them pliable. Fill the damp paper with remaining ingredients, make a roll and top with a sprig of cilantro.

 

Dipping Sauce

 

Ingredients:

 

1/4 cup fish sauce

1/2 cup sugar

1/2 cup crushed peanuts

3/4 cup rice vinegar

 

Preparation:

 

Whisk together ingredients and serve with spring rolls.

 

Egg Rolls

 

Egg rolls are traditionally Chinese. Wrappers can usually be found at grocery stores.

 

Ingredients:

 

2 cups cooked ham

1 cup water chestnuts

1 cup scallions

1 chopped green pepper

1 cup bamboo shoot

1/2 cup reconstituted black mushrooms, stems removed

egg-roll wrapper

eggwash

oil

 

Preparation:

 

In a large bowl mix together ham, water chestnuts, scallions, green pepper, bamboo shoot, and mushrooms. Place the egg-roll wrapper in a diamond shape and fill with mix. Brush edges in eggwash, then roll up, making sure to fold in the sides. Fry egg rolls in about one inch of oil until they are brown.

Turkey Recipes

 

 

Turkey Pizza

 

Fast, light and tasty. Use left overs or fresh cooked pultry

 

 

1 c. cooked turkey or chicken 1 c. frozen chopped spinach drained and dried 2 tea. lemon juice 1/2 tea. salt 1/4 tea. blk. pepper 1 clove of garlic cut in half 1 lb. pizza crust [boboli works well]1/2 c. alfredo sauce 3/4 c. shredded fontina cheese 1/2 tea. redpepper flakes

 

Preheat oven to 450 Combine first five ingr. Rub cut sides of garlic over pizza crust, discard garlic[if you really like garlic you can mince it and sprinkle over crust]Spread alfredo sauce evenly over crust, top with pultry mixture. Top with cheese and pepper flakes. Bake untl crust is crisp.

Notes: You can lighten this up by using light alfredo any brands work well.

Pie Dough

 

Ingredients:

 

1-1/2 cup flour

1/2 tsp. salt

8 Tbs. unsalted butter, chilled and cut into pieces

4 Tbs. vegetable shortening, chilled

 

Preparation:

 

In a food processor with a steel blade, mix flour and salt. Scatter pieces of butter over the mixture and give it five, one-second pulses. Next add shortening and pulse four more times.

 

Place mixture into a medium-sized bowl. Add three tablespoons cold water. Keep adding water until the dough sticks together. Shape into a ball, wrap with plastic wrap and chill for 30 minutes. While the dough rests, work on the filling.

 

Filling

 

Ingredients:

 

1-1/2 Tbs. vegetable oil

1 medium-large onion, finely chopped

3 carrots, peeled and cut

2 celery stalks, cut

salt and pepper to taste

1-1/2 lb. precooked turkey (skinless, boneless and cubed)

4 Tbs. butter

1/2 cup flour

1 can chicken broth

1-1/2 cup milk

1 cup water

1/2 tsp. dried thyme leaves

3 Tbs. dry sherry

3/4 cup frozen peas

3 Tbs. fresh minced parsley

 

 

Preparation:

 

Heat oil in a Dutch oven or soup kettle. Add onions, carrots, celery, salt and pepper and saute for about five minutes. Remove from heat, and empty ingredients in separate bowl with turkey.

 

In the kettle or Dutch oven, heat butter over medium heat until melted. Add flour, then whisk in chicken broth, water, milk and thyme leaves. Simmer until sauce thickens. Season with salt, pepper and sherry.

 

Pour sauce in bowl with turkey and vegetables. Stir in peas and parsley. Pour mixture into individual pie pans or a shallow baking dish.

 

On a floured surface, roll out dough into desired shape. Dough should be 1/8-inch thick no matter what shape it's rolled into.

 

Cover filling with dough and fold under any overhanging dough. Puncture vent holes in pies, one hole for small pies or up to four for larger pies. Bake in a 400-degree oven for 20 to 30 minutes, depending on the size of the pies.

Sandwich recipe for leftover meats!

 

 

 

Monte Cristo Sandwich

 

 

 

2 slices bread

2 slices ham

2 slices swiss cheese

2 slices turkey

 

Lay 2 slices bread side by side. Put a slice of ham and swiss cheese on each, add turkey to one slice and put sides together. Beat 1 egg with a little bit of milk. Dip sandwich in egg mixture on both sides. Put in frying pan that has been heating with a tiny bit of oil. Brown both sides. til cheese is melted slightly.

Slice in half and shake powdered sugar over top.

Serve with cramberry sauce. (you can use strawberry preserves)

 

Some places put the sandwich in a batter and deep fry it.

Another Leftover Meatloaf recipe:

 

Meatloaf Parmesan

 

Slice left over meatloaf and place it in a baking dish. Top it with tomato sauce and a slice of mozzarella cheese and bake until its hot and bubbly.

Strip leftover cooked Chicken from the bone.

lightly dust it with a coat of flour and salt and pepper

fry in a teaspoon of olive oil

next add diced fresh tomatoes

peppers- 4

onions- 1 large

2 carrots sliced in coins

a can of tomato sauce

fresh parsley

10 cloves of garlic

 

Let all ingredience simmer for three hours under low heat

Serve over leftover rice
