The Preserving the Harvest Forum was created to teach others, how to preserve in the home environment, food preservations techniques. It solely relies on the scientific, extensive research of professionals whose sole occupation has been, to educate us on safer home preservation techniques. I don't know how many of y'all have read around here, the history of home canning. From its birth in the Napoleaonic area, to today. I've read and researched the techniques of the late 1800's, to the early 1940's, when there seemed to be a huge learning curve with making this a more safer practice. I see on many sites, and throughout the net people exclaim "my grandmother did this for 70 years with no calamities...". I'm grateful grandma didn't experience any adverse consequences, but the facts weigh out that there were others, that did the same thing, that were harmed by it. My personal 'authority' on home food preservation is the National Center for Home Food Preservation http://www.uga.edu/nchfp/how/can_home.html . That will be the 'authority', along with the Ball Blue book of Home Canning, amongst others that mirror the same facts, that this forum will advocate. This is what we will teach in this forum to those new and/or expanding their home preservation of food knowledge base. As for the rest, we can discuss it down in The Cave and The Edge forums. There is alot of 'envelopes' I push, but I refrain from pushing them in this forum, where I'm trying to teach new people, how to safely (as much as possible to 100% safely) preserve their foods at home.
