Sweet relish recipe?

Sweet Pickle Relish

 

Yield: 8 half-pints

 

4 cups chopped cucumbers, (about 4 medium)

2 cups chopped onions, (about 2 medium)

1 cup chopped green bell pepper, (about 1 medium)

1 cup chopped red bell pepper, (about 1 medium)

3 1/2 cups sugar

1/4 cup salt

1 Tbs celery seed

1 Tbs mustard seed

2 cups cider vinegar

 

1. Combine cucumbers, onions, green and red peppers in a large bowl. Sprinkle with salt and cover with cold water.

 

2. Let stand 2 hours. Drain, rinse and drain thoroughly.

 

3. Combine sugar, spices and vinegar in a large saucepot. Bring to a boil. Add drained vegetables; simmer 10 minutes.

 

4. Pack hot relish into hot jars, leaving 1/4" headspace. Remove air bubbles. Adjust 2-piece lids.

 

5. Process 10 minutes in a boiling water canner.

I tried for years to make sweet relish but it never had much body. An old timer told me to grind up cabbage and cook with the rest of the ingredients. I DO NOT like cooked cabbage so I was leary of doing it. They swore it worked. I tried it and sure enough I don't taste the cabbage and there was alot more body to it.

 

My recipe is probably pretty much like Canned Nerd's but it also calls for carrots. If I don't have the exact number of this and that I subsitute more of that and this. What I mean is maybe this year my carrots weren't good enough to "waste" on relish so I'll use more green peppers. Or my onions really produced well so I'll use less peppers because I didn't have as good a luck with them. If I don't have enough cucumbers I might use zucchini. Also, if I have plenty of ingredients I double, triple or even quadruaple the recipe.

 

I think relish pretty much started as an end of the garden way to use up your garden produce. Pretty much whatever amount of the ingredient you use, it's good.

Gonna resurrect this old thread instead of starting a new one. Does anyone have a sweet pickle relish recipe that does not have onions? Hubby hates onions and would not eat this if I made it. I need something closer to what you get with the store bought brands. Got lots of cucumbers coming in and I'm really hoping to use them to make some relish.

Rather than just omitting them.. I would use more cucumber in place of the onions. So instead of 4 cups cukes and 2 cups onions.. you'd do 6 cups cukes. That way the bulk of your recipe stays the same with regards to the vinegar and spices and all.

That's what I figured I would do. I knew to keep the bulk the same.

Now he's whining about the bell pepper in it. <_< I told him the commercial store bought stuff had it in there and he just made a face at me. Sheesh!

Late, I know. But, I make sweet pickle relish and I hate onions. I chop them very small and they are a smaller part in my recipe. But, my recipe is a little different. The process is the same but the ingredients are:

 

All vegetables are chopped first thing.

8 medium cucumbers

1 large onion

2 C chopped red bell peppers

2 C chopped green peppers

1/2 C canning salt

7 C sugar

2 T celery seed

2 T mustard seed

4 C vinegar (I use white)

I finally managed to find a recipe for sweet relish with no onions or peppers in it. On a whim, I ordered The Complete Book of Pickling which I found for a good price on Ebay. She had a just the recipe I needed in there. Looking forward to trying it next year when the cukes start coming in.
