Quick Salsa Chili

 

1 quart cubed beef or pork drain meat (reserve liquid to other dishes).

1 large onion – chopped, fresh or dried

1-2 pints salsa mild or hot depending on taste )

2 15 oz cans pinto beans ( rinsed and drained )

1 10 oz can tomato juice

 

In a saucepan stir in meat, salsa, beans and tomato juice; heat . If desired, garnish with cheese and peppers and serve with sour cream and onions. Serves 12.

 

 

MY personal note: I will be adding kidney beans and changing the tomato juice to canned stewed or diced tomatoes. I like a little more texture and base to my chili.

Here's one of my cupboard cooking quickies...

 

Quick Creamy Tuna and Noodles

 

Cream of Chicken

Canned tuna

Canned sweet peas

Egg Noodles

Season Salt and Black Pepper

 

I dilute the cream of chicken as instructed on the can with water, add the noodles first to get them started softening and then add everything else. If you like a strong tuna taste, use the juice, if not drain. I drain the peas about half way and dump them in too. My kids love this and it's easy.

We make an inexpensive and hearty dish the family calls Corned Beef Hash but it's really more of a thick stew. MIL made it with canned pork & beans but I like to use canned pinto beans.

 

2-3 potatoes

1 can corned beef, diced

1-2 cans beans

diced green pepper and onion to taste

 

In a heavy saucepan, add water to diced potatoes to slightly more than cover. Throw in the onion and/or green pepper. Simmer until potaoes are about done. Do not drain! Stir in the beans and corned beef. Add a little more water if needed to thin enough to keep from sticking. Heat through.

 

Served with a nice slice of home baked bread, this is very filling and comforting dish in the winter. frozen

 

It would be easy to use dehydrated peppers and onions, and frozed or reconstituted dried potato chunks. I haven't tried to dehydrate the frozen hash browns (chunky style) yet, but I'm thinking they would work fine in this recipe.

Hearty Beef Stew

 

1lb.noodles

 

2. large cans Dinty Moore beef stew

 

2 table Spoons Sour cream .

 

Cook noodles as directed drain, add butter, mix well. heat soup add to noodles, stir in sour cream

I'm not saying this is the healthiest of dishes...nobody stone me for using ramen noodles! smile But it's actually pretty tasty and these are ingredients from my stock pantry.

 

Ramen noodles (6 packs)

diced onions/celery/bellpeppers ( I now have these dehydrated )

2 cans of tuna ( I prefer packed in water)

 

I add the vegies (and you could also do corn or peas, etc...) into the boiling water right before I add the noodles and seasoning and then stir in the tuna at last. Serve it up and season with black pepper or hot sauce. feedme

 

Of course I'm cooking for a small army, but you could easily half the amount of noodles and tuna.

Not only does it last longer packed in oil but it definately has more flavor and nutrition. Oil would be one of the badly needed items in a shtf situation so would be a valuable thing to have right there in the tuna can. I generally buy tuna in canola oil. Hey, I like Ramen noodles!

You know, I think I gave it up years and years ago because of calories...one of the lower fat tricks?? I can't remember the last time that I tasted tuna in oil. I may have to get some and try it again. If we like it pretty good I could start using up my water packed and stocking up on the oil packed! thanks

Pulled Pork Sandwiches (or Beef)

 

2 cans/2 pints /1 quart pork chunks

dehydrated onion & green pepper

ketchup

mustard

vinegar

 

Drain pork, put in pan. Add dehydrated onion & pepper to taste (I use 1-2Tbsp each). Squirt in about 1/2 -3/4 cup ketchup and 1-2 Tbsp mustard. Add 1 Tbsp vinegar. Stir and heat. (I break the chunks apart into shreds while stirring) Add a little water if needed. Serve on buns or homemade bread. Serves 6.

Here's what I made for the roommates tonight:

 

TVP Sloppy Joes

(serves 8-10)

 

2 Bell Peppers

2 Med Onions

1 ½ Cups Boiling Water

2 ½ Cups Tomato Sauce

½ quart jar of marinara

1 ½ Cups TVP (Textured Vegetable Protein)

2 T Mustard

2 tsp Chili Powder

½ tsp NaCl

1 T Tamari or Braggs or Soy Sauce

½ tsp pepper

1 tsp sugar

 

1. Sauté onions and peppers.

2. Add remaining ingredients and stir.

3. Cook on Med for 20 mins.

4. Serve over toast, English muffins, or rice.

 

You can swap out the water and TVP and just put in 2 pints of ground beef from your pantry! This is soooooo good y'all!!! I served it on home made Onion/Garlic/Rosemary hamburger rolls w/ potato salad and relish... cheerfeedme
