It was so good, I sure wished that I had got the recipe from her. but they were transferred and I thought of it too late (we were all U.S. Army) She made it with that italian style canned zucchini and tomatoes,and some kind of prepackaged croutons or stuffing mix. I have tried a few things but they just turn out mushy and unappetizing. Don't know what I'm doing wrong. I used to be good at figuring out recipes. I know it must be pretty simple. kappydell Posted July 12, 2016 Share Posted July 12, 2016 I was looking for some new zucchini ideas to woo my room mate into eating zucchini in something other than zucchini bread, and I ran into your post...Here are three zucchini-tomato recipes Ive tried and they were all tasty variations on the tomato-zucchini scallop theme.... TOMATO - ZUCCHINI SCALLOP 2 sm. zucchini, sliced 2 sm. tomatoes, peeled & diced 1 med. onion 1 c. plain croutons 3 tsp. salt Dash of pepper 1 med. tomato, cut in wedges 1 c. (4 oz.) cheddar cheese, shredded Place half of zucchini slices in 1 1/2 quart casserole. Top with half of diced tomatoes, onion, croutons, salt and pepper. Repeat layers once. Top with tomato wedges. Cover. Bake at 350 degrees for 1 hour. Remove cover and sprinkle with cheese. Bake 5 minutes or until cheese melts. ZUCCHINI-TOMATO DISH 1 med. to lg. zucchini Cubed bread 1 lb. can tomatoes Shredded sharp cheese Salt and pepper Slice zucchini and arrange in bottom of casserole. Amount of zucchini will depend on size of dish. Cover zucchini with bread cubes. Pour tomatoes with juice over bread. Cover with shredded cheese. Bake at 350°F for 1 hour for fresh zucchini - less time if zucchini was previously cooked or frozen. SKILLET TOMATOES AND ZUCCHINI 2 tbsp. butter 2 sm. zucchini, sliced 1 med. onion, sliced thin 2 med. tomatoes, sliced 1/4-1/2 tsp. garlic salt 1/4 tsp. dry basil, crumbled Fresh ground pepper 4 oz. shredded mozzarella or Cheddar 1 c. seasoned croutons In saute pan, melt butter. Add zucchini and onion. Saute over medium heat until zucchini just begins to be tender. Add tomatoes and seasonings. Cover and cook 3-5 minutes or until tomatoes are tender. Remove from heat and sprinkle with cheese and croutons. Cover and let stand 2-3 minutes or until cheese melts. A wonderful side dish or a lower calorie crustless pizza. 4 servings - 190 calories each. Quote Link to comment
Annarchy Posted July 13, 2016 Share Posted July 13, 2016 MIL calls this Cala Basa Sauté a couple slices of onion diced in a little oil. Add 2-3 Tbs. diced tomato to hot pan. Sauté a minute or two. Remove from heat. Add sliced zucchini, (2-4 med sized) and a cup of corn. (Frozen or canned). Add 1-2 tbs. of tomato bullion. Add enough water to cover ingredients and cook until zucchini is soft. Turn off fire and cover with cheddar, Colby or longhorn cheese. Mmmmmmmm....... Quote Link to comment
