cheese and potato pancakes

Recommended Posts

I'm trying to find more ways to use the fresh cheese I made last summer and put in the freezer. This morning I made cheese and potato pancakes! Boil, drain and mash 3 large potatoes, mix with about 1/2 as much cheese as you have potato, beat two large eggs with about a cup of heavy cream (I'm trying to use up an abundance of cream too), stir into the cheese and potato mix, add enough flour to make a soft dough, (taste to see if enough salt) drop spoonfuls into a skillet with hot lard and flatten into pancakes. Fry till lightly brown on each side.

I served them with salsa this morning, but you can put about any topping on them you like. Sweet or savory, either is good.
