I was really glad to read this as I love to can my own soups etc. But remember regardless of what you see on the Internet; no cream of soups, no noodles, no pasta, no rice, no flour, no cream, no milk nor thickeners.SOUP09-25-2015, 07:40 AMQ: SOUP??A: The USDA Complete Guide to Canning has a soup recipe that is unusually flexible (for USDA recipes). Basically any meats/vegetables that already have canning recipes (separately) can be combined into a soup. This includes vegetables, dried bean or pea, meat, poultry, or seafood soups can be canned. These directions are intended for use with ingredients that already have separate canning recommendations for those foods. Do not add noodles or other pasta, rice, flour, cream, milk or other thickening agents to home canned soups. If dried beans or peas are used, they must be fully rehydrated first. Everything must be cooked first. Combine solid ingredients with meat broth, tomatoes, or water to cover. Boil 5 minutes. Add salt to taste. Add small amounts of other dry spices to taste. Fill jars halfway with hot solid mixture. Add remaining hot liquid, leaving 1-inch headspace. Jeepers Posted July 1, 2016 Author Share Posted July 1, 2016 I want to come up with a new soup recipe to can. I'm thinking Spring Soup. Something light. Maybe something with a little cabbage and some carrots for color. Or some cabbage and asparagus with a little carrot. Or some potato and leek soup. All with a chicken broth base. I think it would be nice for hot days or if you're not feeling well and want something light and quick. I've heard cabbage gets strong when canned but I like cabbage so I don't think that would bother me. Quote Link to comment
