The WE2's Posted February 24, 2016 Share Posted February 24, 2016 Just caught the tail end of it because I didn't realize the time difference until I went online and printed out a map :-( Plus, MrWE2's jigsaw bit the dust so he had to make a trip to Menards for a new one. Can't do kitchen countertop without a jigsaw! Will try to catch the next one for sure :-) I won't be doing anything but it will be fun to watch and listen and maybe make a friend or two in our area. This is the second time using the low sugar stuff and it didn't set. Now I have five jars of a super sweet orange juice. Quote Link to comment

I'll just use a regular jelly/jam recipe using the juice. I made some terrific white concord grape jelly using 100% juice so I'm betting it would work just fine for 100% orange juice. You might want to try putting the "super sweet orange juice" back into a pot, add powdered pectin, bring it to a boil and then jar it up? Also, it may still go ahead a set. Before you try anything, let it set for several days (maybe even 4?) and if it still isn't set then try re-doing it? I had some jelly that it took 3 whole days to set :-( Oh...ps...didn't she use stevia instead of sugar? If you're using low-sugar pectin you wouldn't want to use regular sugar would you? BexarPrepper has suggested I put in in the fridge for a couple of days to see if it will set. Maybe I'll try re-doing it if it doesn't set..... Quote Link to comment

I usually make a quadruple recipe because my kids and MIL blow through all that I make. Spiced Orange Jelly2 cups orange juice and grapefruit juice total (I usually use about 1/2 and half or 2/3 orange and 1/3 grapefruit)1/3 cup lemon juice2/3 cup water1 package powdered pectin2 tablespoons orange peel, finely chopped1 teaspoon whole allspice½ teaspoon whole cloves4 sticks cinnamon, 2 inches long3½ cups sugarYield: About 4 half-pint jarsTo make jelly. Mix orange juice, lemon juice, and water in a large saucepan. Stir in pectin. Place orange peel, allspice, loves, and cinnamon sticks loosely in a clean white cloth; tie with a string and add to fruit mixture. Place on high heat and, stirring constantly, bring quickly to a full rolling boil that cannot be stirred down. Add sugar, continue stirring, and heat again to a full rolling boil. Boil hard for 1 minute. Remove from heat. Remove spice bag and skim off foam quickly. process 5m for pints or half pints. Quote Link to comment
