Testing - 2-ingredient brownies

So I posted about finding a great price on canned pumpkin.

Momo and dogmom4 piped up with the possibility of trying something new they had read about... 2 Ingredient Pumpkin Brownies.

 

The pumpkin I bought was a larger can, but I had a smaller can that would work with my brownie mix. So I tried it tonight.

I mixed it up with my hand so it was well mixed. It really felt odd not adding any eggs to it. :blink:

 

I baked it for 30 minutes, and the toothpick test was clean, so I pulled it out and let it rest a bit.

 

It is very flat, very dense... didn't really rise at all. Moist, but not "raw".

 

I had the kids taste it without my telling them the ingredients.

 

LilDD said it tasted "eggy", and I told her it had no eggs in it. When she knew it was pumpkin, she said that it was a kind of "veggie" taste, not unpleasant but not "chocolatey" like you expect a brownie to taste. It's not a true "brownie" taste.

 

DS agreed that it wasn't bad, but just was kind of "off". They would eat it, but it's not a favorite.

 

If I wanted brownies but had no eggs to add to the mix, it would work out just fine.

Hmmm, camping...? I wonder if these might be good slowly "baked" over the fire in patties in a skillet?

 

There's nothing to spoil (like eggs or milk), so they might make nice little "cow pies"...? :scratchhead:
