New Gadget From BALL!

Sorry, I just can't see using this with it's limited capacity and it's price. It may have a place in someones kitchen that can spend that kind of money and then watch it get unused. In this economy I would think that they would try to come up with something quite a lot cheaper. But, the water bath canner's are not pricey if you go to auctions & such plus any pot will do as long as it covers the jars properly & has at least a small towel/cloth in the bottom.

 

Also it stated that a person should only use their recipes...I'm out of luck using the Ball Blue Book? Seems like I am. I do not see where this will get more novice or nervous canners willing to try their "luck" at canning. I wish them luck, I think they will need it.

Reminds me of the existing steam canners on the market that are not approved by the National Center for Home Food Preservation since the steam penetration posed a concern. Unfortunately they ran out of funds years ago to do any serious testing on them. Perhaps that will change with Ball's entry. With that information and the $300 price tag is enough for me to keep doing things the recommended ways.

In case anyone is interested in that canner simply because it handles smaller, less heavy amounts, you can get smaller water bath canners. Some of us live alone or it's just two of us or health issues allow us to can a lot but in short spurts; and large batch canning isn't desirable. A year or so ago I bought a smaller water bath canner and I absolutely love it especially since 99% of my canning is done in pints or half pint jars. Because of that, I use less water, less gas (stove) and it's so much lighter (less heavy loaded). It's just one step down from the large canners we all are familiar with. I wish I remembered the size but I'm thinking it is the 11 1/2 quart size. Plus one of my glass lids fit it so I can watch it without lifting the hot graniteware lid that it came with. And it's cute and easy to store. I think I got mine at Lehmans when I happened to see it. I've seen it elsewhere though.

For years now I have been using stainless steel stock pots (w/glass lids) from Big!Lots ranging in price from $5 to a max of $20. I paid $18 for one the same size as my 16-qt canner. My smallest will hold 1 quart jar and comes with a wire rack, apparently for cooking Asparagus. Always be on the lookout in the stores and garage sales since you never know when some treasure will show up.

I posted this link for info only! I would not buy it, even if I did have money to waste! I did spend $40 on Ball's stainless steel WBC when it first came out though. I splurged on that because of the clear lid with vent holes.(and I was tired of the granite ones rusting) I always hated to lift the lid to peek and see if the water was still boiling. Sadly though, the lid steams up so badly you can't see if the water is boiling or not. I have 3 of the small canners for pints and I love them. So much easier and quicker to do 7 pints.

I was pretty sure that was why you posted it, Trudy. It's always good to keep up on new stuff and discuss it. Especially for new people and for people who read here but haven't joined in yet.

 

My glass lid didn't come with the smaller canner I bought. It is one I already had. It steams up but not too bad. I can still see the water boiling. It might be because it isn't a tight fit. It hangs over the pot a little bit. Not sure if that makes a difference or not. :shrug:

 

I would have bought a stainless steel one if I had known about them when I bought the graniteware one. I was just so excited to see a small water bath canner. I didn't even know they made them. I really like the smaller ones! I've had a couple of the big ones rust too.

Even if I can't watch the water boiling, that Ball stainless steel canner has been worth every penny I paid for it. I always use it to cook my Annies Salsa for canning. I usually can at least 100 pints every year if I'm able. I cook 4 recipes at a time in that pot, and it has the double layer bottom so the salsa don't stick! (I have scorched it before using other thin bottom pots!) We love Annie's salsa at our house! It even makes eggbeaters taste good.lol I use a jar in my chili and vegetable soup too! Not even counting Mexican rice, burritos, tacos...
