kappydell Posted June 24, 2011 Share Posted June 24, 2011 Put the bread a pan as usual, then put the pan on a trivet inside a larger covered pan. The pan acts as oven/dutch oven, etc even over an open fire. Another technique that comes up repeatedly in 1800's texts say to bake the bread sitting on the fire grill until the bottom is brown, then tilt the pans on their sides so the tops face the fire to brown them. Sounds like a risky balancing act to me, but I suppose a clever person could rig a rack of some kind if this was their only recourse... Link to comment
