Mashed Tater candy This comes from back when they started to make powdered sugar. The story that I heard was a lady had some mashed taters left and was going to through them out and spilled some powdered sugar and picked it up and put it in the bowl with the taters and her boy mixed them and started to eat then and put some peanut butter on it . What was left got hard and he liked it. So came the tater candy. I do not know if this is true or not. But it sounds good. 1/2 Cup mashed white potatoes 1/2 Cup creamy peanut butter 1 pound powdered sugar sift sugar and mix with warm potatoes. Put some powdered sugar on your cutting board and roll to a oblong shape about 1/4 in thick cover with peanut butter and roll up tight then wrap in saran wrap and chill.unwrap and slice about 3/8 in thick sift with a little powdered sugar Link to comment

ANd here....for you tater fans, is a recipe for "Mounds Bars" made from mashed potatoes! Title: "Mounds" Bars Categories: Yield: 1 Servings 1/4 c Mashed potatoes 1 3/4 c Powdered sugar 1 tb Butter; softened 1/2 ts Vanilla 1 1/2 c Coconut 1/2 ts Vanilla 1 Square unsweetened .. chocolate 1/2 To 3/4 cup chocolate chips Combine potato, powdered sugar, butter, vanilla, coconut and salt in bowl; mix well. Shape into balls. Place on baking sheet. Chill until firm. Melt unsweetened chocolate and chocolate chips in double boiler; blend well. Dip chilled candies into chocolate; place on waxed paper. (My Daddy who is color blind accidentally made bright green gravy for Thanksgiving...thought he was using Gavy Master but it was a bottle of green food coloring..... As I read your post, I thought it was too bad we didn't have purple potatoes like yours that day!LOL) Link to comment
