You can grow celery hearts in a glass of water, just cut off the bottom of your celery stalk like on this link:

In first grade my dad helped me stick tooth picks into a sweet potato and grow roots for it in a jar as a gift to my teacher. She proclaimed to be delighted with it and made a big deal of watering it every two days or so. The vines looked like a lovely purple and green ivy. Just a note...the greenery is poisonous.

Okay, we put our root in the window and it grew 7 thin stalks with leaves. The largest were 6 inches.
I don't think you could get entire new plants, but are giving the roots the extra time and water to finish growing. We dried them and are using them as a substitute for parsley.
I'll be doing this regularly from now on. I love getting the full value from things.
This doesn't work with leeks. They just grow lots of roots. (Hey, I figured what the heck?)

wonder if it's possible to take the celery after some roots have grown and put in the garden? wonder if a full size plant would grow? hmmm...

maybe it depends on the variety of sweet potato?
I gave a Filipino friend some sweet potato plants last yr and the only part of the plant she eats is the leaves! She does not eat the root! She puts the leaves into soups. She says they are very nutritious (iron? I forget).
I'll have to ask her more about that next time I see her.
Edited: OK, found this list of edible parts of plants that we normally don't eat, and sweet potato leaves are on it, plus lots of other things. I'll also post this in a new thread.

..................... what could be better in the middle of the winter (well for us anyway) then to start one now to remind us all that the snow WILL go away and Spring IS coming.
