Any advice with the All-American Pressure Canners? I'm looking at them now and hope to buy one in a few months, specifically either the 921 or 925. They both hold the same amount of jars. What are the advantages of the larger size (925)? Does the extra room matter? Thank you.

The 925 holds more liquid, so you can cook a slightly larger quantity than the 921, if you use it for pressure cooking.
The 925 also holds more cans, if you process in cans instead of jars.
The 921 is slightly shorter than the 925, which is a plus, if you have a hood over your stove.
I have the 930, and it just barely fits under my stove hood without the lid.

I have a 910, a 921 and 2-941's. I personally wouldn't bother with the 925...it's more expensive and in reality, I wouldn't ever use the extra height.
The extra height will also add extra weight, and the AA's are very heavy canners to begin with.

"One day, we’re going to stand before the gates of Heaven. Some of us want to be able to walk up there in a white robe and we want to sing Abba Father and Amazing Grace and we want to say to the Lord, “I worshiped You.” But I want you to think about this: Heres the way I want to enter the gates of Heaven. I want to come skidding in there on all fours. I want to be slipping and sliding and I want to hit the gates of heaven with a bang. And when I stand up and I stand before Christ, I want there to be blood on my knees and my elbows. I want to be covered with mud. And I want to be standing there with a ragged breast plate of righteousness. And a spear in my hand. And I want to say, “Look at me, Jesus. I’ve been in the battle. I’ve been fighting for you.” Ladies and gentlemen, put your armor on and get into battle. God bless you." ~ General William G. Boykin, U.S. Army (ret.)
