Used leftover shoulder roast from last night, added some egg noodles and a bit of Phily Cream Cheese/Fiesta flavor, and about the last of my bread.  Guess I'll be baking some more soon.

Mexican Style Stuffed peppers for 2

What You Need
1 lb. ground beef
1 onion, chopped
3 Tbsp. Taco Seasoning Mix
1-1/4 cups water, divided
1 small tomato, chopped
1/2 cup instant white rice, uncooked
2 large red peppers
1/4 cup Medium Salsa
3/4 cup Shredded Sharp Cheddar Cheese, divided

Make It
HEAT oven to 400ºF.
BROWN meat with onions in skillet on medium heat. Stir in taco seasoning mix and 1/2 cup water. Bring to boil; simmer on low heat 5 min., stirring occasionally. Remove half the meat mixture; cool, then refrigerate or freeze for another use.
STIR 1/2 cup of the remaining water into remaining seasoned meat in skillet. Add tomatoes; mix well. Bring to boil. Stir in rice; cover. Remove from heat. Let stand 5 min. Meanwhile, cut tops off peppers; discard tops and seeds. Mix salsa and remaining water in bottom of 9-inch square baking dish. Stand peppers in baking dish.
ADD 1/2 cup cheese to meat mixture; stir. Spoon into peppers; top with remaining cheese. Cover.
BAKE 35 to 40 min. or until peppers are tender. Serve with sauce from baking dish.

Thanks for asking, Amber.   I didn't react!  :)   I haven't checked this thread in awhile. 

 

 

Today, we're having salmon.  I have filets thawing in the fridge.  It is  Alaskan wild-caught sockeye salmon.   I've never had salmon before; I hope I like it.  DH is going to put the salmon in foil with butter and grill it.  That's the way we eat other fish.

 

I like when he grills--no pans for me to wash.

Thanks for asking, Amber.   I didn't react!  :)   I haven't checked this thread in awhile.

Roast in pressure cooker with 'taters, onions & carrots.  Simple but quick since we usually head out right after supper to water garden.

Opened a jar of my canned chicken, some canned potatoes, and whipped together some chicken gravy from a homemade mix.  Nothing special other than the chicken and potatoes were from 2008 and they were as flavorful as the first day they were canned.

Yesterday, I just had green beans for supper.  It was so hot and humid that I just didn't feel like eating.  DH worked outside all day and wasn't very hungry, either.  He just had salad.

 

Today, we're having salmon filets on the grill. I'll make a veggie to go with that.  Grilling will be good as it won't heat up the house more.

Marinating some chicken thighs in salad dressing and have some potatoes in the slow cooker outside. This would be a good day for salad, but there isn't any left after yesterday.

Had some left-over cold pasta salad (regular lettuce mixture with bow tie pasta & sesame seed oil drizzled over it) along with seasoned meat balls and baked beans.  Needed to use up some things before we go camping for the holidays.

Lambs quarters pulled and set aside when weeding the new strawberry bed...a nice 4-oz steak, corn (saved some for fish bait later) and mashed potatoes & gravy. Very simple and uneventful, except for the greens...they were so good I was GLAD my room mate does not eat greens!

What do Lambs quarters look like Kappy?  I keep looking a pics on the web but just can't figure out how to be sure in the real world.
