pickling hot peppers

I'm growing hot peppers...I would like to learn how to pickle them. Does anyone have any easy receipes or any suggestions???

I can't help you with pickling but I can tell you DO NOT do much handling of them w/o gloves. My hands burned for 2 or 3 days the first time I worked with them.

YES! to wearing of gloves-
Been there - done that!
Poor Lori didn't use them and had to work for DAYS with hurt hands.

But I was thinking that maybe I could do that to some of the hot ones we have?

Now we do make this up and it is good on any meat OR even on Scrambled Eggs!

MARTHA'S (Amish) HOT PEPPER BUTTER

*42 hot peppers - ground up 1 cup Flour
1 pint Mustard 1 ½ cups Water
1 quart Vinegar 6 cups Sugar
1 Tablespoon Salt

* You can mix hot peppers with med. Hot or just use mild if you don't want it too hot.

To Make:

> Grind up peppers (without seeds), add Mustard, Vinegar, Sugar & Salt.
>Bring to a boil. Make a paste with the flour and water then add that to
the mixture. Then boil 5 minutes more.
> Put into hot jars and put on rings and lids.
> Water Bath Can for 20 minutes to seal jar lids

Just another one chiming in on the hands. Be sure to protect them! And keep your hands away from your face. My first experience with hot peppers was many many years ago and I still remember it. Days of burning hands. And you can't wash the hot off. Wear gloves.
Blessed are the cracked ~ for they shall let in the light.
