  1. Welcome to the world of freezing Kathy. You'll be surprised how quick your freezer fills up though. First small bunch of black raspberries today.
  2. Good find Ambergris! DH worked in our little town for almost 30 years. Wednesday's were trash day and the treasures he brought home over the years was amazing. I considered alot of it junk at the time but it's unbelievable how much we've used for fencing, pens, and anything else you can imagine. It's also surprising how many people throw their soda and beer cans away. DH would save them until they were taking over the garage and off to a redemption center he'd go. Yearly he made close to $1,000. Yes, it's amazing what people toss.

  4. 11 cups of strawberries in the freezer. Made a dent in my strawberry bed but still plenty more to pick.
  5. Yesterday a friend told me she'd picked all the rhubarb that she was going to pick this year. If I wanted more to help myself. Well I did and froze another 13 bags today. She has lots more but I think 25 bags is enough and yet............................hmmmm.
  6. I put 12 bags, 2 cups in each bag, of rhubarb in the freezer today. I'm out of rhubarb so that's it for this year.
  7. Actually, I use a recipe out of my Betty Crocker cookbook that I also got as a wedding gift. This old girl seems to just stick with her old things!
  8. Great find martianchick. I've cooked waffles ahead for years and not only are they cheaper than buying premade frozen in the store but they're also much better tasting. I quintuple my recipe and, like you're planning on doing, make dozens at a time. I got my waffle iron for a wedding gift almost 45 years ago and it's still going strong.
  9. My recipe is from the box of cornmeal but if you grind your own corn here's the recipe. Boil 3 cups of water. Mix 1 cup cold water, 1 cup cornmeal and 1 tsp salt together and stir slowly and constantly into the boiling water. Turn the heat down and cook 5 mins. stirring often. When it's done I put it in a loaf pan, partially cover with waxed paper until cool. After cooling cover with tin foil and put in the fridge. To cook slice 1/2" slices and fly in skillet. Serve with butter and syrup. I've never tried the fruit that Trudy mentioned above but I will next time I make some.

  11. I made a loaf pan of corn meal mush for DH's breakfasts for the next few days. He loves it and it's a cheap, cheap dish to make. Fry it, add a little butter and syrup and he's good to go. Well, I'd probably give him a little ham or sausage patties to go with it.
  12. I tried for years to make sweet relish but it never had much body. An old timer told me to grind up cabbage and cook with the rest of the ingredients. I DO NOT like cooked cabbage so I was leary of doing it. They swore it worked. I tried it and sure enough I don't taste the cabbage and there was alot more body to it. My recipe is probably pretty much like Canned Nerd's but it also calls for carrots. If I don't have the exact number of this and that I subsitute more of that and this. What I mean is maybe this year my carrots weren't good enough to "waste" on relish so I'll use more green peppers. Or my onions really produced well so I'll use less peppers because I didn't have as good a luck with them. If I don't have enough cucumbers I might use zucchini. Also, if I have plenty of ingredients I double, triple or even quadruaple the recipe. I think relish pretty much started as an end of the garden way to use up your garden produce. Pretty much whatever amount of the ingredient you use, it's good.

  20. Have you been to the Fireside Forum? Last night I finished Stephanie's, "The Great Divide". It was very good and well worth the read. I've read others too and I'm amazed at the talent here at Mrs. S. If you haven't checked there be sure you do. It's well worh it.

  25. I have just taken out my 57th quart of applesauce from the hot water bath. I plan on making one more 7 quart canner full and then make some apple jelly. Of course, in a week when I'm over being so tired of canning applesauce I may just start in again. What a year for apples!!! My apples are so sweet I use nothing but apples to make my sauce and a little water in the pan when cooking. Talk about organic!
