  3. The following recipes prepare a large batch of freezer meatballs and also include examples of ways to use frozen meatballs. The sauces require some preparation, but the meals go together quickly with your stockpile of precooked meatballs in the freezer. MILLIONS OF MEATBALLS (this makes a lot -- at least four dozen, depending on size) 12-ounces tomato sauce 1 1/2 cups dry bread crumbs 4 eggs, lightly beaten 1/2 cup onion, finely chopped 1/4 cup green pepper, finely chopped 1 teaspoons salt, optional 1/8 teaspoon dried thyme, crushed 1/8 teaspoon dried marjoram, crushed 4 pounds ground beef In a large mixing bowl, combine first eight ingredients. Add ground beef and mix well. Shape into meatballs (use a small cookie scoop if available) and place on boiler pan so grease can drain while cooking. Bake uncovered in 350 degree oven for 30 minutes. Divide into meal-sized portions. To prevent from freezing into a solid meatball-mass, freeze individually on cookie sheets and then place in freezer bags. Label and freeze. To serve meatballs, thaw completely and reheat with your choice of sauces (six sample sauce recipes follow). SWEET-N-SOUR MEATBALLS (5 servings) 1 (14-oz) can pineapple tidbits or chunks, undrained 1/4 cup brown sugar 2 tablespoons cornstarch 1/2 cup water 1/4 cup cider vinegar 1 teaspoon soy sauce (or more to taste) 1 family meal-sized portion of freezer meatballs 1 (5-oz) can water chestnuts, drained and thinly sliced 1 green pepper, cut in strips Drain pineapple tidbits, reserving syrup. In medium saucepan, combine brown sugar and cornstarch. Blend in reserved syrup, water, cider vinegar and soy sauce. Cook and stir over low heat until thick and bubbly. Carefully stir in meatballs, water chestnuts, green pepper strips and pineapple. Heat to a boiling. Serve over hot cooked rice. CHILI-DAY MEATBALLS (5 servings) This recipe sounds a little strange (chili sauce and grape jelly?), but it tastes like burgundy sauce (only without the wine) 1 (12-oz) jar chili sauce 11-oz. jar grape jelly 2 tablespoons lemon juice 1 cube beef bouillon dissolved in 1/2 cup water 1 family meal-sized portion of freezer meatballs Whisk together chili sauce, grape jelly, lemon juice and bouillon, breaking up all clumps. Simmer on low heat until sauce starts to thicken. Add freezer meatballs; cook in sauce until meatballs are fully thawed and heated through. Serve over hot cooked noodles or rice. MEATBALL SANDWICHES (6 servings) 1 family meal-sized portion of freezer meatballs (approximately 4-5 meatballs per person) 6 hot dog buns (or hoagie rolls) 6 thin slices mozzarella cheese 2 cups prepared spaghetti sauce Thaw meatballs and spaghetti sauce (if using frozen). Place both in medium saucepan. Heat until hot. Place meatballs into warmed buns. Ladle small amount of spaghetti sauce onto each sandwich; place mozzarella slice onto each sandwich. TOMATO-SAUCED MEATBALLS (5 servings) 1 (10 3/4-oz) can condensed tomato soup 1/2 cup water 1 teaspoon Worcestershire sauce 1 family meal-sized portion of freezer meatballs Mix together soup, water and Worcestershire sauce. Place meatballs in a medium sized saucepan; pour soup mixture over meatballs. Simmer until meatballs are heated through. Serve over hot cooked rice. MEATBALL STROGANOFF (5 servings) 1 (10 3/4-oz) can condensed cream of mushroom soup 1/2 cup sour cream or plain yogurt 1 cup mushrooms, sliced and cooked in butter until soft 1 family meal-sized portion of freezer meatballs In medium saucepan, mix together mushroom soup and sour cream. Gently stir in mushrooms and meatballs. Simmer until meatballs are heated through. Serve over hot cooked rice or over egg noodles tossed with melted butter and chopped parsley. CATALINA MEATBALLS (5 servings) 1 medium onion, thinly sliced 2 teaspoons olive oil 1 bottle Catalina salad dressing 1 family meal-sized portion of freezer meatballs Saute' onion slices in olive oil until softened. Place frozen meatballs in medium skillet. Pour dressing over meatballs. Cover skillet and cook over low heat until dressing caramelizes on meatballs and onion, and the meatballs are fully thawed and heated through. Serve over rice.
  4. This is a way to restore windshield wipers. Go to an electronics supply store (NOT Radio Shack) and buy rubber renew or equivalent. Spray it on you wiper, (you need your own bottle) and leave for 10 minutes. It works best in the shade. Wipe it off and you are done. A $10 bottle has lasted me 5 years and the wipers on my vehicles still clean like new.
  5. When bread is delivered fresh to stores, each day there is a different color twist or clip closing. The colors are in alphabetical order: Monday - blue; Tuesday - green; Thursday - red; Friday - white; Saturday - yellow. You can quickly tell when the bread arrived at the store and choose the freshest loaf. (Note: They don't normally deliver on Sundays or Wednesdays.)
  6. Saran Covers (the ones with the elastic around the edges) for an emergency rain bonnet and shower caps for company.
  7. Take a small child's short sleeve shirt, like a size two, sew the ends of the sleeves and the bottom hem closed, hang on a metal hanger. Pull the hanger open and bend a little to make a circle. Hang it on your clothes line and fill with your clothes pins.
  8. To kill weeds growing up through concrete cracks or between pavers We use household vinegar. Vinegar works well, and is broken down by soil bacteria.
  9. Keep empty dish soap squeeze bottles. When I buy a new bottle, I pour half into an empty bottle and fill both with water. Double for the money. I also keep one on the dryer to spot treat stains. It is filled with about 1/4 c. laundry liquid, 1 T. ammonia and the rest water.
  10. I love Herb Tea, but it can be pretty expensive. I make my own. I use an ordinary store tea bag, steep in boiling water as usual, then I mix a little sugar and cinnamon together and sprinkle about a teaspoon in my tea, and it is cinamonny delicious. The aroma of the cinamon is intoxicating. I just love it !!
  11. 4 hours 5 minutes (5 min prep, 4 hrs cooking) 6 boneless skinless chicken breast halves, frozen 1/2 cup orange juice 1/2 cup chicken broth 1/4 cup honey 1 tablespoon dry mustard 1 tablespoon teriyaki sauce 1 cup broccoli florets 1 cup cauliflower florets 1 cup carrots, sliced in pennies 1. Place frozen breasts in crockpot. 2. Mix juice, broth, honey, dry mustard and teryiaki sauce. 3. Pour over chicken in crock. 4. Cook on low for four hours. 5. Add vegetables about one hour before serving. 6. Place on TOP of chicken and do not stir. 7. Cook the additional hour and serve over rice. 8. (note: if you're not using frozen chicken subtract about an hour from cooking time!).
  12. This recipe is very very good. I suggest you use as many colors of peppers that you can get, it improves the taste of the recipe. 35 minutes (15 min prep, 20 min cooking) 2 lbs boneless beef sirloins, 3/4 inch thick 6 tablespoons cornstarch 1 (14 1/2 ounce) can beef broth, w/ onion 2 tablespoons soy sauce 1/2 teaspoon garlic powder 4 cups green peppers or red peppers or yellow peppers or orange bell peppers , cut instrips 4 cups hot cooked rice 1. slice beef into thin strips. 2. slice peppers into thin strips. 3. stir fry beef in"nonstick" skillet, or wok, until browned and juices evaporate in seperate bowl mix soy, broth, cornstarch, and garlic. 4. mix constantly. 5. add peppers to wok. 6. add cornstarch mixture. 7. stir-- cook until mixture boils and thickens, and peppers become soft. 8. serve over cooked rice.
  13. 5 hours 10 minutes (10 min prep, 5 hrs cooking) 1 lb ground turkey 1 cabbage shredded 1 cup uncooked rice 1 can tomato soup 1 can favorite spaghetti sauce salt pepper, and seasoning to taste 1. cook ground turkey in pan add tomatoe soup stir and place in a crockpot. 2. Place half cup rice in mixture in crockpot and stir up. 3. layer half of the shredded cabbage 4. In seperate bowl mix spaghetti sauce and rest of uncooked rice. 5. Pour half over cabbage 6. Place remaining cabbage over sauce and finish with the rest of sauce. 7. Cook on low for 4-6 hours. 8. stir and season to taste at the end of cooking time.
  14. yummy apple cobbler, lower calorie than tradition cobbler (not to mention pie!). and sugar free for diabetics to relish! 45 minutes (5 min prep, 40 min cooking) 1 1/4 cups all-purpose flour 2/3 cup Splenda 1 tablespoon baking powder 1/4 teaspoon salt 1 cup skim milk or low-fat soy milk has a slight taste though 1/2 teaspoon vanilla 4 cups golden delicious apples or gala apples , cored and sliced thinly or other fave variety 1/2 tablespoon 40% fat margarine (stick) cinnamon (about 3/4 TSP) 1. Preheat oven to 350*F. 2. Melt the margarine in 9 x 13 inch pan, only enough to cover the bottom, let cool Stir together flour, splenda, baking powder, and salt. 3. Gradually mix in the milk and vanilla (the batter may be thick, don't add more milk or water!) Pour the batter into the pan over the margarine (don't stir). 4. sprinkle with half of the cinnamon. 5. place the apples ontop of the batter. 6. sprinkle with remaining cinnamon. 7. (don't mix) Bake in the oven for 30-50 minutes, or until golden brown and bubbly. 8. Enjoy with some fat free vanilla ice cream!
  15. 4 bone in pork chops 1 tablespoon olive oil 2 cans cream of mushroom soup (use generic!) water milk salt pepper garlic powder 1. Season chops well with salt, pepper,& garlic powder. 2. Brown on both sides in a large dutch oven or saucepan. 3. Remove pork chops to a paper towel lined plate and sop up any extra oil or fat with a wadded up paper towel. 4. Dump in Cream of Mushroom and add 1 can water and 1 can milk. 5. I usually whizz this up with my immersion blender until smooth. 6. Add back the pork chops and simmer for about an hr. 7. The longer they simmer, the more tender the chops will become. 8. We eat this with mashed potatoes and green beans.

Graham Bread 1/2 c Brown sugar 3/4 c Cold water 1/2 c Melted shortening 3/4 c Milk 1 c White flour 1 1/3 ts Salt 1 ts Baking soda 2 c Graham flour Dissolve sugar in water; add shortening and milk. Sift white flour, measure, and sift with salt and baking soda. Add to first mixture. Add graham flour. Mix thoroughly. Bake in well-oiled bread pan, in moderate oven (375 F) 1 hour. 1 loaf.

Cheddar Bread 3 3/4 c Unbleached flour 5 ts Baking powder 1/2 ts Salt 1/3 c Butter 2 1/2 c Cheddar; sharp 1 1/2 c Milk 2 ea Eggs; lg, slightly beaten Combine the dry ingredients, then cut the butter into the flour until the mixture resembles coarse crumbs, then add the cheddar cheese. Combine the milk and eggs then add the mixture to the cheddar mixture. Stir until just moistened, then spoon into a greased 9 X 5-inch loaf pan. Bake at 375 degrees F. hour. Remove from the pan immediately and let cool on a wire rack.

Quick Celery-cheese Loaf 3 c Flour -- sifted 1/4 c Sugar 4 ts Baking powder 1 ts Salt 1/2 c Shortening 1 c Cheddar cheese -- shredded 1/4 ts Celery seed 1 1/4 c Milk 1 Eggs Into large bowl, sift together flour, sugar, baking powder and salt. With pastry blender, cut in shortening until coarse crumbs form. Stir in cheese and celery seed; set aside. In small bowl, mix milk and eggs until well blended. Add milk mixture to dry ingredients; stir just until moistened. Pour batter into greased and waxed paper-lined 9x5x3 loaf pan. Bake in 350 degree oven 50 to 60 minutes, or until loaf is golden brown and toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove; peel off waxed paper. Cool on rack. Makes 1 loaf

  23. Naw... its easy making all this stuff once you get the hang of it. One thing I don't want to do though for a couple of days is eat anything after all that cooking.
  24. Well Deb my menu's are subject to change because there are some days you just feel like having a fresh home cooked meal. We don't eat alot but we are snackers and thats our downfall but I snack on things like Sugar Free pops and Sugar free jello or when I can eat it get some fresh fruit or have a handful of peanuts.
