Deblyn Posted December 4, 2002 Share Posted December 4, 2002 1 lb apples rind and juice of 1 lemon 4 oz butter 12 oz sugar 1 teaspoon ground ginger 1 teaspoon ground cinnamon 4 eggs, beaten Peel and core apples, cook to a puree. Place in bowl over a pan of simmering water, and add rest of ingredients. Stir frequently until thick, pot and cover while hot. This is lovely on toast or scones.
