Awesome Oriental Cabbage, Pea & Ramen Salad 1/2 head shredded cabbage (or cheap & use a bag of cole slaw mix) 1/2 c. sliced roasted almonds (cheaper if you buy from bulk) 4 - 6 green onions w/tops chopped 2 pkgs crushed ramen noodles (oriental or chicken) 1 1/2 c. frozen peas uncooked Sauce: 1/2 c. rice wine vinegar (or use 1/4 c. & 1/4 c. white or red vinegar) 2/3 c. oil (a splash of sesame oil adds nice flavor) 3 T. sugar 2 pkgs. flavoring from ramen noodles Mix shredded cabbage, almond & onions. Stir in sauce. Day of party or 1 - 2 hours before serving, toss in crushed ramen & peas. Also great to add cooked chicken or shrimp to! My family eats this once a week during the summer -- leftovers are GREAT because the ramen gets softer. Quote Link to comment
