Dee Posted March 20, 2003 Share Posted March 20, 2003 Cinnamon Chip Banana Bread 1/2 cup Butter (it turns out much better when you use the real stuff) 1 cup white sugar 3 bananas, mashed 2 eggs (I have used egg beaters with this and got the same results) 2 cups flour 1 tsp. salt 1 tsp. baking soda, mixed with 1 Tbsp. hot water 1/3 cup chopped walnuts 3/4 cup Hershey's cinnamon chips (I've also used the mini-chocolate chips when I haven't had the cinnamon ones). Cream butter, sugar, bananas & eggs. Sift and add flour, salt and baking soda. Stir in nuts and chips. Bake in a well-greased BUNDT pan at 350 degrees for 40 minutes or until toothpick inserted comes out clean. As soon as you take it out of the oven, flip it out on a cooling rack. Tastes great warm right out of the oven. I have made this recipe in a regular bread pan but thru time and experiments have gotten much better results using a Bundt pan. It bakes much more evenly and stays moist too. I found with the regular pan you would have to bake about 15 minutes longer resulting in a drier outside of the loaf. Enjoy!!! Quote Link to comment
