Canned Nerd Posted March 21, 2011 Share Posted March 21, 2011 Sweet Pickle Relish Yield: 8 half-pints 4 cups chopped cucumbers, (about 4 medium) 2 cups chopped onions, (about 2 medium) 1 cup chopped green bell pepper, (about 1 medium) 1 cup chopped red bell pepper, (about 1 medium) 3 1/2 cups sugar 1/4 cup salt 1 Tbs celery seed 1 Tbs mustard seed 2 cups cider vinegar 1. Combine cucumbers, onions, green and red peppers in a large bowl. Sprinkle with salt and cover with cold water. 2. Let stand 2 hours. Drain, rinse and drain thoroughly. 3. Combine sugar, spices and vinegar in a large saucepot. Bring to a boil. Add drained vegetables; simmer 10 minutes. 4. Pack hot relish into hot jars, leaving 1/4" headspace. Remove air bubbles. An old timer told me to grind up cabbage and cook with the rest of the ingredients. I DO NOT like cooked cabbage so I was leary of doing it. They swore it worked. I tried it and sure enough I don't taste the cabbage and there was alot more body to it. My recipe is probably pretty much like Canned Nerd's but it also calls for carrots. If I don't have the exact number of this and that I subsitute more of that and this. What I mean is maybe this year my carrots weren't good enough to "waste" on relish so I'll use more green peppers. Or my onions really produced well so I'll use less peppers because I didn't have as good a luck with them. If I don't have enough cucumbers I might use zucchini. Also, if I have plenty of ingredients I double, triple or even quadruaple the recipe. I think relish pretty much started as an end of the garden way to use up your garden produce. Pretty much whatever amount of the ingredient you use, it's good. Quote Link to comment
Daelith Posted July 10, 2016 Share Posted July 10, 2016 Gonna resurrect this old thread instead of starting a new one. Does anyone have a sweet pickle relish recipe that does not have onions? Hubby hates onions and would not eat this if I made it. I need something closer to what you get with the store bought brands. So instead of 4 cups cukes and 2 cups onions.. you'd do 6 cups cukes. That way the bulk of your recipe stays the same with regards to the vinegar and spices and all. Quote Link to comment

I knew to keep the bulk the same. Now he's whining about the bell pepper in it. I told him the commercial store bought stuff had it in there and he just made a face at me. Sheesh! Homesteader Posted July 20, 2016 Share Posted July 20, 2016 My DH is allergic to onions. He can't digest the skins. When I make things, I leave the onions whole (for roasts or soups) or cut them into rings. DH can remove them with his fork. He doesn't mind that one bit. Quote Link to comment

But, my recipe is a little different. The process is the same but the ingredients are: All vegetables are chopped first thing. 8 medium cucumbers 1 large onion 2 C chopped red bell peppers 2 C chopped green peppers 1/2 C canning salt 7 C sugar 2 T celery seed 2 T mustard seed 4 C vinegar (I use white) Quote Link to comment

On a whim, I ordered The Complete Book of Pickling which I found for a good price on Ebay. She had a just the recipe I needed in there.
