Homesteader Posted May 23, 2003 Share Posted May 23, 2003 Okay Reci(pe) Any type white fish (catfish, perch, snapper etc) fillets or steaks Rinse and pat dry Heat a cast iron skillet on the stove until it is VERY hot Rub a little oil or melted butter on fish to hold the seasoning on Coat entire surface with your choice of seasonings such as prepared cajun seasoning mix or a blend of basil,thyme,lemon pepper,salt Throw the coated fish in the hot pan Cook fillets about 1-2 minutes per side Cook steaks about 2-3 minutes per side Turn carefully as they can "fall apart" easily You may want to dab a little butter or lemon juice on top before serving. Alternately, you can make the same recipe by broiling the fish in your oven or toaster oven. If fixing in the oven be sure to butter or oil the pan you use so it won't stick. It will be less likely to smoke or fall apart if you do it this way. It won't be "truly" blackened but it will be delicious. My tartar recipe is: Mayonnaise Ketchup Horseradish-just a tad Relish-about a teaspoon or so Onions - finely chopped I don't measure them but I listed them in order of amount used in recipe.
