mommato3boys
I have been searching for a recipe for homemade almond butter. The ones I have found suggest soaking your almonds overnight. Does anyone else make their own almond butter if so do you soak your almonds? Quote Link to comment
Canned Nerd
I've never seen a recipe where they had to be soaked first. Seems to be the exact opposite with roasting them first and having them completely dry, then oil is added to make the butter. Quote Link to comment
Jeepers
I don't know I've never made it but could the soaking be to remove the skins? Quote Link to comment
lovinit
A Blog called http://Whole New Mom.com will give you great info about homemade nut butters. Quote Link to comment

mommato3boys
She said the same thing as the other sites that the skin on the nuts contain phytic acid and enzyme inhibitors that prevent them from being digested. Soaking the nuts softens the skin and removes the phytic acid and enzyme inhibitors. Quote Link to comment
Ambergris
I like to sprout, then roast my almonds. I forget why, but that's how I've done it. Quote Link to comment
